Eggless Orange Cake
Fresh orange taste abounds in this delicate and supple orange cake. This simple recipe creates a moist, flavorful dessert that actually improves with time, making it perfect for advance preparation.

Because we use oil instead of butter to add moisture, thoroughly beating the batter is crucial for achieving a light and fluffy crumb. This is the only stage that incorporates air into the cake, so mix on high speed for 5 minutes, or until the batter becomes pale and fluffy.
I created this cake at a festival when we had an abundance of fresh oranges. Running short on ingredients for our planned dessert, I turned to these beautiful citrus fruits to craft something sweet and memorable. The natural, tangy sweetness of oranges made the cake a perfect treat. We typically serve three savory dishes at our festivals, plus a dessert and fresh juice—this orange cake became an instant favorite that disappeared quickly from our tables.
